Meal Plan Monday (4/27)

Notes about last week:
  • The pea pesto turned out sooo good! I can't wait to make it again. I will post the recipe this week.
  • I was distracted while making the sausage & potato dish so I forgot to season it. I had bought a 4 pack of sausages and only used 2 for the dish so I'm going to make it again this week with the leftover sausage that I froze and hopefully I remember to add some seasoning!
  • We only ate out twice last week! We were invited to dinner with the in-laws one night and we ate lunch at Costco on Saturday (gotta love the $1.50 polish hot dog and drink meal). I'm so proud of us for only eating out twice!
Notes about this week:
  • We'll be heading out of town on Friday afternoon for a wedding we are attending on Saturday. Luckily the wedding is being held close by my family so we will get to spend some time with them also. Being out of town for the weekend means that we will (1) be eating out, (2) be spending too much money, and (3) be missing the farmers market - but that's okay ... we are excited to see family (especially my niece who recently spent a few days in the hospital for a bad kidney infection) and we are excited for our friends wedding!
  • I still have not actually been able to use the rice cooker so I'm very excited for that new rice cooker recipe I found! I'll let you know how it turns out!
Other notes:
  • I'm very behind in posting my Project 365 photos. I hope to get to that in the next few days!
  • We've been experiencing some pretty drastic changes at work the past couple of weeks ... it's been rough and I think it might get worse before it gets better.
  • My dang car is back in the shop again this week ... it has yet to run for more than 4 consecutive days in almost 4 months. We've dumped more money into it than we wanted to and it still keeps dying. The worse part? VW has no idea what is wrong. It's so frustrating.
  • We plan to run our next 5k on May 9th - the Susan G. Komen Race for the Cure! It will be our first 5k of 2009!!! We have not been training very much the last few months so I don't expect to be breaking any PR's - but the race is for a great cause & we are looking forward to it.
  • I've made some workout routine changes in the hopes of getting past the plataea I've been at for months & months ... I'm hoping by changing things up it might help.

Day One: Backyard Project

Today, along with a ton of other things, we worked on our backyard. Posted here you will see what we call the "flood plane" aka "garden area". That tree in the back right corner is mostly dead and is going to be cut down in the coming weeks by my father - so Jon and I have started a mission to get all of the vegetation out of this area, dig up and cap off the sprinklers, and get it ready to be rototilled, leveled, and a french drain installed. This dirt you see is very deceiving. It's not dirt. It's clay. I don't know how anything is growing in there. And, under all that dry cracked clay is a ton of ants. Every time Jon dug up another plant - another ant hill was distrubed and ants would start crawling everywhere. Those plants in the back by the almost dead tree - hydrangeas. They are almost as tall as me and they have a root system that is like 2-3 feet deep. Trying to dig all of this out was very difficult and very time consuming. We made some progress then decided the next day to buy some Round Up and just kill it all first.

I almost forgot to get a photo today and realized just as we were sitting down to start trying to catch up on some of our shows. As you can see we are a little behind in quite a few series. It shows that we have 63% available - but we have a HD DVR & that thing holds A LOT. We have something like 4 pages and each of the other series have just as many episodes recorded also. We sure will have lots to watch over the summer :)

Notes about last week:
We ended up going out to eat on Friday night because Jon got home late from basketball and then we had to take a load of dirt & rock (that had been in the bed of his truck all week) out to his dad's house then we had to pick up my car from the shop so it was late by the time we got all that done and we didn't feel like cooking. We ended up having the frozen Trader Joe's Chile Lime Chicken burgers on Saturday night after a long afternoon of working in our yard and I made the crock pot Mexican Chicken on Sunday instead so we are having leftovers tonight.

Notes about this week:
It's getting closer to the end of the month which means we are running low on funds so I was trying to come up with meals that would not require us to buy a lot at the grocery store yesterday and luckily a lot of the ingredients for the meal plan I came up with we either already had or were on sale when I was going through the add before going to the store. I am also getting a little bored with our meal plans so I wanted to change things up a little bit AND I wanted to use both the new food processor (thanks to my dad & step-mom) and our new rice cooker (thanks to Corey & Terry - Jon's uncle and aunt) - both of which were wedding presents this week so I'll be making the pea pesto on Tuesday (in the new food processor) and the wild rice on Wednesday (in the rice cooker). As a side note, yesterday I used our new crock pot that we also got a wedding present from Andy & Linsey (thanks guys, we L.O.V.E. it).

Yes, you read that right - PEA PESTO!
I'm making pea pesto. I'm a huge pesto fan but I'm also allergic to nuts and traditional pesto contains pine nuts - so this week I'm going to try to make a pea pesto that I adapted from a recipe I saw in my latest addition of Rachel Ray's magazine. I'm hoping it turns out wonderful because I'm also a BIG pea fan (they are like my absolute favorite veggie) and we need a new pasta recipe big time. I'll be sure to post the results!

I've been watching flowers start blooming all over our yard ever since we got back from our honeymoon and I've been dying to get out there and start clipping some to have fresh flowers in our house. These irises are growing in our front yard, along with our rose bushes, and right after work today I went out there to clip some. I promptly brought them back inside and put them in this vase and took a photo! Then I noticed that our flowers were infested with aphids so I put them in a plastic cup with some water & rocks (to weigh the cup down - it's still pretty windy here) and moved them outside onto our picnic table. Now I need to research how to get rid of those little buggers. Got any suggestions???

You can't really tell in this picture by it was really windy today! When I was in the bathroom in the wee hours of the morning getting ready for work I heard a strange new noise and asked my husband what he thought it was. We both stood there for a second listening and then realized it was my brand new bamboo wind chime blowing in the wind! We got the wind chime over the weekend at Big Lots and its hanging out back off our covered patio! I love it. When I got home from work the wind was blowing like crazy and my wind chime was chiming away!

Back in January I started tanning at a local tanning salon near my home/work for our wedding. The week before the wedding I stopped tanning I was hoping to work on my tan while we were in Maui but the weather did not cooperate with that plan (cloudy & windy) so over the last weekend we bought some lawn chairs & on this day after work I got out a beach towel and grabbed my book and laid out in our backyard for a little while to start working on my tan! I'm very much looking forward to this becoming a regular occurrence this summer!

On Saturday afternoon, the day before Easter, we spent some time at Lowe's picking out some flowers & seeds & this tree to plant in our yard. On Easter Sunday we got to work and started planting everything. This Lipstick Hibiscus Tree is already blooming & we are looking forward to watching it continue to bloom all summer ... and hopefully for many years to come.

Farina is not only my cousin but she is also my BFF - she knows me & understands me better than anyone else & loves me anyways (much like my husband). She's beautiful, smart, fun, flirty & outgoing. She is currently living in Santa Maria with her boyfriend Ryan (my college roommate - how awesome is that?!?) and her daughter Taeyah (my sweet honey girl). Farina was the maid of honor at my wedding last month & her daughter was one of my flower girls.

Farina, I hope you have an amazing birthday - I'm missing you desperately and wish I could spend your birthday with you but I hope you know that you're always in my heart! I love you!!!

This morning was our first trip to the farmers market this year! I'm a big fan of the farmers market and before we bought our house I was going every single Saturday morning to get fresh, local fruits and vegetables. Jon & I eat a lot of fruit & veggies and I like to support the local farms & our local farmers market. On this day we got a bag of oranges & some asparagus.

Honeymoon Risotto

I interrupt these regularly scheduled Project 365 posts to bring you my new favorite food!

I’m going to call it HONEYMOON RISOTTO

While we were in Maui for our honeymoon we attended a Honeymooner’s Social at the resort we were staying at. We were given free champagne (again) and we got to participate in a cooking demonstration put on by the resort’s award winning chef on how to make risotto.


I’m a huge rice fan which is funny because growing up I hated rice. I would not eat any rice that was not chicken flavored Rice-a-Roni … but now, I love it. I love plain white rice. I love brown rice. I love wild rice. I love Mexican rice. I love sushi rice. I love any and all sorts of rice. We even got a rice cooker as a wedding present and I’m dying to start using it (once we run out of organic frozen pre-cooked basmati rice from Trader Joe’s – have you had this stuff? Only takes 3 minutes in the microwave and its so good). I even bought a bag of wild rice to cook when we run out of the frozen Trader Joe’s rice. Anyways, I’m getting way off topic here. At Honeymooner’s Social we learned how to make risotto from start to finish – Jon even helped!


It was fun & yummy & entertaining & knowledgeable all at the same time. I’ve never made risotto before. I’ve always been too scared ever since I started watching Hell’s Kitchen and learned that Gordon Ramsey is always pissed about the way the contestants make the risotto. Plus, I’m not a very patient person. And risotto can take quite a while to cook. But the risotto we had at the Honeymooner’s Social was soooo good. The “secret” ingredient that made it so good was mascarpone cheese! So creamy & yummy! We couldn’t wait to get home and try to make it ourselves.

Here’s the recipe we received from the resort:

Ingredients
  • arborio rice
  • olive oil
  • diced shallots
  • white wine or preferably dry vermouth
  • hot chicken stock or broth
  • salt & peper
  • parmesan cheese
  • mascarpone cheese
Directions
  • Using a large sauce pan with a heavy bottom over medium heat with a wooden spoon gently saute your diced shallots with olive oil until they become translucent and tender. Add your rice and gently saute for a minute or two.
  • Cover the rice with white wine or dry vermouth (never sweet) and gently stir until the rice has absorbed all the liquid (this method is called blanching your rice).
  • Slowly add hot chicken stock or broth to the rice one 4 oz ladl at a time (the broth must be hot). Repeat several times - very important note: only add the next addition of hot broth once the rice has absorbed the last addition of hot broth. Continue this method unti lthe rice becomes al dente (firm to the bite) yet yielding and palatable. (It will take about 1 1/2 times the amount of broth to rice)
  • Once the rice is about 80% cooked you finish it - finish it by adding a generous spoonful of mascarpone cheese (mascarpone cheese is a beautitful creamy cheese that will instantly make your rice creamy and give it a wonderful velvety texture). Next, fold in the parmesan cheese until melted.
  • Finally, taste your rice and season with salt & pepper as necessary - add the salt & pepper at the end because the parmesan tends to be salty and if you season before adding the parmesan you rice could become too salty).
What you should have now in your pot is a beautiful batch of creamy delicious risotto. What makes risotto so enjoyable is how you decide to flavor it or serve it. When flavoring your risotto it is best to add your flavoring ingredients about half way though or towards the end. Some simple, easy & classic risotto flavors are: mushrooms & truffles, fresh spring peas, chestnuts, roasted peppers, saffro & seafood. Have fun and flavor your rice how you prefer. The most important note is to follow the basic fundatmentals!


Our risotto was good – was it as good as the batch we had at the Honeymooner’s Social? Well, no. We didn’t sauté any shallots in olive oil (we forgot to get them) and we didn’t have any dry white wine or dry vermouth so we skipped that too. But we did buy some mascarpone cheese & our risotto was very creamy and good. And, we didn't flavor it - but paired it with some Farmers Markey fresh asparagus spears! But, of course it was not as good as the batch made by the award winning chef … even with that being said --- I know this is now going to be a regular meal in our rotation of recipes and I am very excited --- and I know that every time we make it we will get to think back to our honeymoon & remember the wonderfully amazing time we had.

Today was our first day back on the mainland. We were delayed out of SFO into SAC and didn't get home until 3am but we still managed to get up at a decent hour and get some errands taken care of (a trip to the social security office & DMV to get my name legally changed). We finished off the day watching American Idol and movies. I had taken a few different pictures throught the day, but once I saw Lucky laying in Jon's arm's like this - I knew this had to be my photo for the day. Lucky is our cat. I've had him since he was about 8 weeks old. He is going to be 11 this year. He has moved more times than I have. He is affectionate and loveable. He is also very goofy and we often find him sleeping around the house in very funny positions like the one in the photo above (you'll notice that his legs are straight up in the air, he is laying on his back & his paw is between his legs much like Al Bundy on Married with Children).

This was our last full day in Maui & we didn't have any adventures or excursions planned so we drove around the island & pretty much just had a lazy day by the pool and ended our trip with a really great dinner at the resort. While we were out driving around in our rented Dodge Charger we stopped in Lahania on our way to Wailea to see the Banyan Tree.

Jon golfed - and I payed a much smaller fee to just "ride along". I like golfing, Jon even bought me my own clubs a couple of years ago - but I'm no good and I didn't want to hold up the foursome & pay the $200 per round so I opted to ride along and take photos. It was a gorgeous morning (even thought it started out cloudy) and the wind played havoc on some of the holes - but we had a good time & enjoyed the amazing views!

When we checked into our hotel the lady assisting us at the front desk asked if we were in Maui celebrating anything - which we responded with "we're on our honeymoon"!!! She said, "you're staying in a no view room ... let me see if I can find something better for you." She upgraded us to a partial ocean view AND gave us a free bottle of champagne. In the picture above, my husband is pouring our free champagne as we enjoyed dinner on our first night in Maui at the Hyatt Regency resort.

Menu Plan Monday (4/13)

The wedding is over & the honeymoon has ended --- so it's time to get back on track and so I'll start by getting back to posting our weekly meal plans!

How many of you out there do a weekly meal plan?

We sit down together every Sunday and come up with this plan for the week and then we make our grocery shopping list from this plan & then we also include our staple items like milk, yogurt, lunch meat (for Jon), our weekly vegetable & fruits (for lunches), etc. We only buy what's on our list (unless something catches our eye AND is on sale OR a great deal). Ever since we started doing this (way back in January 2008) we had greatly reduced the amount of junk food in our house and we have also reduced our monthly grocery bill. It also helps us stay on track with eating healthier & keeps us accountable to the meal plan since we usually don't have any extra meal items in the house (except a few staple items like soup and rice).

Today will also be our first official weigh in since March 2nd & tonight's planned trip to the gym will be our first trip to the gym since February 28th! You'll notice many weeks on the side bar where weigh-in's were missed & you'll also notice that I logged a big fat ZERO for miles in March. With that being said --- my goals for the rest of April are to get back on track with portion control, not eating out as often, and get back to eating healthier foods. My fitness goal is to log 15 miles before the end of this month. It's been a month and a half since I last run so I know that I'm going to have to start out slow and easy and build up so I think 15 miles in 17 days is achievable! Another personal little goal I'd like to achieve this month is to attend the gym alone on the days that my husband is at soccer practice or a soccer game late and a trip to the gym together might not be possible. I'm hoping to be able to make that a regular habit of mine. It would be a lot better than sitting at home on my butt not doing anything.

Once I moved these two fully packed suitcases into the hallway tonight the kitties decided to gather around and make their pleas for us not to leave! Those two suitcases are two of three we are bringing along with two carry-ons and one golf bag! You'd think we were going to Maui for a month ... but alas its only going to be 6 wonderfully amazing day! I can't wait to post pictures from the honeymoon when we get home! I'll miss you kitties.

Today I started packing for our honeymoon. I'm one of those people who always over packs even though I know that I won't wear 1/2 of what I bring --- I'd just rather have too much instead of not enough. So far I've got my bathing suits & cover-ups along with some skirts & shorts & tank tops & tube tops in there. I need to do some laundry before I can finish up! I'm very excited for our honeymoon!

The Red Truck

This here is what I like to call The Red Truck. For the past several weeks I've had some trouble with my car and its been in and out of the shop. On and off I've been driving this beast of a truck to and from work ... and occasionally to run an errand or two (like to my hair appointment in Folsom). This beast is dirty. It's smelly. The radio doesn't work. It's big. BUT it got me to and from work while my not-so-trustworthly car couldn't SO I'm grateful for The Red Truck and for my father-in-law who kept letting me borrow it.

Today we started writing our thank you cards for our wedding. We only got a small handful of them done ... but it felt good to get them started. Today after work I started cleaning up our house and unpacking all our wedding gifts --- both things I had planned on doing on Sunday until my awful hangover had me stuck in bed most of the day. After I finished unpacking everything --- this is what 1/2 of our garage looked like. What a mess! We are sure going to be able to fill our recycling bin for the next several weeks!

After drinking way too much the night before, I spent this Sunday laying in bed watching movies on the other new TV we recently purchased and snuggling with my kitties, Lucky & Layla --- and my husband, too! I actually think I watched 4 movies back-to-back on TBS (the current movie on the screen was Monster-in-Law). Late in the afternoon I started feeling better but I spent the better part of the day laying in bed ... hungover :(

Shaken, not stirred

I love me a good martini & I'm lucky that Jon's best friend, Ryan, knows how to make them just like I like them. This day was our 1 weekaversary (yes, its a word - in the urban dictionary. Don't believe me? Google it) of being married & we celebrated with dinner & drinks at a downtown Sacramento pub where Jon's best friend is working. We had such a good time! We were just hanging out in the practically empty bar when a pub crawl came in --- let's just say, I'm sure it was a night to remember, but I can't. Too many martini's ... and shots ... and martini's ... and shots! I can't drink like I'm 21 anymore ... especially since I'm inching my way towards the big 3-0!

New Haircut

What photo would be better to follow up my "last long haired self photo in the mirror" than my new hair cut! I love it! I prefer my hair to be short ... above my shoulders, above my collar line, and in a slight A line style. Which is excatly what my amazing stylist did for me on this day! I was so happy & relieved to get my hair cut off AND I was able to cut off 11 inches to donate to Locks of Love!!!

This is not a very flattering photo of myself - but I wanted a "last" photo of my long hair before I chopped it all off to donate to Locks of Love. My Mii

Jon's best friend's Ryan (the best man at our wedding & the person who introduced us) & Mike (a groomsmen) got us a Wii as a wedding present! How awesome is that?!? Today we took a trip to Best Buy & purchased a 2nd controller & then spent the evening developing our Mii characters! I think we are really going to enjoy this wedding present a lot!!! Thanks to two great guys :)

PS - that is our totally awesome new 50" plasma TV we purchased just about a month ago --- we love it too :)

Today was my first day back to work after the wedding --- that makes it sound like I had a lot of time off, but I only took the Monday after the wedding off so this was Tuesday, err my Monday. Okay, that's just confusing! Anyways --- I wasn't really wanting to be at work. That Monday that I was off after the wedding our service center switched computer systems and I basically had no idea how to do my job anymore so I spent the entire day getting caught up from having a couple of days off for the wedding. My desk is very crowded! You'll notice I already had a wedding photo printed and hanging on my little bulletin board --- luckily we kept giving our camera to friends & family at our reception and we ended up with over 400 photos! Woo-hoo!!!

Project 365: 03.23.09

I had this day off work & since my car was in the shop (again) my friend Zach (who was in town from Florida for our wedding & a little vacation) took me to downtown Sacramento to turn in our marriage license and get a certified copy of the certificate! Now all I need to do, once we get home from the honeymoon, is go to the dreaded social security office & DMV to start the process of getting my name changed!!!

The day after our wedding we hosted a luncheon at our home for our parents, siblings & some family members. After lunch we opened our gifts, said our goodbyes, and did some errands --- including helping Jon's sister & her fiance take a few loads over to their new home they recently purchased. Later that evening, alone in our home on the day after our wedding, we enjoyed a slice of top layer of our wedding cake --- which we had decided not to keep. Our cake was so yummy --- we actually got to enjoy the top layer for several days :)

Sampson

My best friend, Linsey and her boyfriend Andy's dog, Sampson, ran away the day of my wedding (03.21.09). They spent a week frantically looking for him - with the help of family & friends - they posted flyers, they searched and searched and searched, they visited the pound & the SPCA, they prayed, they keep hope alive, and they remained positive that they would be reunited with Sampson, the love of their lives. A week later, on 03.28.09, they received a call in the middle of the night from a good samaritan that Sampson was found and had been taken to a vet hospital because he had been hit by a car on Hwy 50 and suffered a broken pelvis, bruised limbs and lungs. He recently had surgery (yesterday) to repair his pelvic bones & to amputate one of his front legs. Sampson is recovering from surgery, and Andy & Linsey are looking forward to bringing him home to recover. This ordeal has been ... unreal. It's been surreal. It's been heart wrenching. There are a lot of really amazing family & friends pulling for Sampson's full recovery, and they have remained supportive throughout all of this. Unfortunatley, as most people are fully aware, vet bills can be astronomical. My friends are over $7000 in debt - and while no price is too high to save Sampson's life, we are raising money to help cover Sampson’s medical bills. I decided to start my Project 365 on 03.21.09, my wedding day! I thought it would be a great way to chronicle being a newlywed & our first married year! I'm hoping that most of the photos will turn out this great & then I can create a photo book at the end of the year. I don't have the best camera, but I enjoy taking photos & I always carry my camera with me. I'm excited to see what I can capture in the next year!

My Project 365

Project 365: Take a Photo a Day, Every Day and See Your Life in a Whole New Way.

I actually stumbled across this photo project about a year ago (before I had started blogging) and had considered starting it but then I got caught up in wedding planning & life just got busy & in the way. Fast forward until about a month ago and a fellow blogger, Stefanie, started her own Project 365 on her birthday and it got me thinking about the project again. I mulled it over and then decided that I wanted to start my own Project 365 too! I picked a date, 03.21.09, and started taking photos. Here I am, 12 days later, and finally getting up to speed about posting about the project and uploading my photos. Check back often to see my updates! I probably will not be able to post daily --- but I will upload my photos to separate posts for easy viewing & tracking.

Bad blogger

I've been a bad blogger ... the last week & 1/2 I've been enjoying not having a to-do a mile long anymore and just enjoying the wonderful weather and longer daylight hours with my new husband. Nothing very exciting has been going on ... we've done some cleaning & shopping & putting away of gifts --- just normal every day types of things. We leave this Saturday for our honeymoon in Maui and I'm super excited! I've never been to Hawaii --- the husband has been a handful of times. We are staying at a very nice resort & plan to relax and enjoy each others company! I can't wait!!!

On thing that has been going on the last couple of weeks is that I started a new project! Check back for updates about that --- I'm very excited about it!!!

Yep, I cut 11 inches of my hair off (to donate, of course)
and I'm truly enjoying having short hair once again!!!
