Meal Plan Monday {March 29}

It’s vacation week!  I was so excited to wake up this morning and hit the road for our anniversary trip!  We’ll be spending the next few days in Napa Valley … drinking wine and celebrating our first year of marriage!  We had a GREAT weekend that included some major “spring” cleaning around the house, finishing building a raised garden bed, a 5k race with a new PR, shopping (!!!), and relaxing.  And, we’ve got 7 more days to enjoy since it’s SPRING BREAK and vacation week :)

Monday

Nutrition Fuels Fitness 5k Race Recap {March 2010}

Today we ran the Nutrition Fuels Fitness 5k at the Elk Grove Park.  This was our first time participating in this race and I was excited that we would be able to walk to the park and save gas, money & the environment as well as get a nice 2 mile warm up walk in.  It was a beautiful spring day here in the Sacramento Valley ~ perfect racing weather!  We headed out to the park from our house around 7:30am and got to the park just in time to watch the kid races {so fun}.  I had NO expectation going into this race other than finishing and hoping to run the whole 5k without walking.  Well, I accomplished both of the goals ALONG with getting a new PR of 33:37 {per The Garmin, official results not yet posted}.  The course was flat & fast and I was able to maintain a nice pace the whole time.  I avoided looking at The Garmin and was surprised when we turned into the park for the last 0.10 and I saw the clock.  I knew  I was running a “race” pace {faster than I normally run} but I had no intention or expectations of getting a new PR because I didn’t feel like I was running as hard as I did when I got my last PR {Run to Feed the Hungry, November 2009}.  It’s only a 4 second difference, but its still an improvement! 

I felt really good after the race, we walked the 2 miles back home, did some stretching and iced the right knee.  So far, I’m still feeling pretty good. NO SHIN PAIN.  My right IT band is sore and my hips feel tight so I  think I will do some foam rolling before bed tonight along with some Yoga posses for IT band relief that I saw in the latest Runner’s World magazine. 

The race was very well organized and I love the location ~ but, I’m biased and partial to the Elk Grove Park :)  I didn’t get any photos today but like I said, it was perfect racing weather, an excellent location, and a flat & fast course.  I would definitely run this race again … especially since I can walk to and from the location!

The First Anniversary Celebrations

We had a wonderful first wedding anniversary this past Sunday and we are looking forward to more celebrating next week on a mini vacation to Napa Valley for wine tasting!

On Sunday we spent the afternoon hanging out at home and we watched the video we recorded on our honeymoon to Maui last year.  It was not very long, and parts of it were kind of boring, but we were able to reminisce about our honeymoon.  After we finished up watching the video, we decided to get ready to go out to dinner but first we exchanged gifts before heading to dinner.

The traditional first wedding anniversary present is PAPER.  Keeping that in mind, we got creative with our anniversary presents.  I gifted Jon with a collage of photos from our honeymoon!  It turned out really good.  To see a tutorial about how to create this collage, click here.  Jon gifted me with Lovopoly, a custom Monopoly board game, AND he had one of our wedding photos made into a canvas

After the gift exchange, we headed into Old Town Sacramento for dinner at The Firehouse.  Neither of us had ever been to the restaurant and that is one of the reasons we picked this location for our anniversary dinner.  We wanted to go someplace we had never been and someplace we would not go on any other average day.  We started with drinks.  Jon had a glass of red wine and I enjoyed a sparkling wine “flight” {sampler}.

We started with a crab cake appetizer then had the Lobster Bisque soup.  Both were absolutely amazing!  For our entree, we split the Filet Mignon.   This was definitely one of the best meals we have ever had.  After dinner we went down by the river to take some photos before we headed home for champagne and cake.

Once we got back home we opened up a bottle of champagne, that we received as a wedding gift, and cut our anniversary cake!

After eating cake, we watched our wedding DVD and reminisced about our wedding while sharing our memories of The Big Day with each other.  My favorite moment = dancing & singing to “8 Days a Week” by The Beatles towards the end of the night.  Jon’s favorite moment = our “big” reveal before the ceremony!  Of course, we also both agreed the best part of the day was when we said “We Do!”

Meal Plan Monday {March 22}

Yesterday was our first wedding anniversary!  We celebrated by going out to dinner at The Firehouse Restaurant in Old Town Sacramento and after dinner we came back home and drank a bottle of champagne that we received as a wedding gift while eating our “anniversary” cake from our bakery and watching our wedding DVD.  Oh yeah, and we exchanged “paper” gifts!  We had a wonderful anniversary and we are looking forward to our anniversary trip next week to Napa Valley!

*Weekday breakfasts alternate between 1/2 bagel or 1 cup cereal & weekday lunches are an assortment of fresh fruit and veggies with a side of hummus and a string cheese {the husband also has a sandwich}.  Daily snacks include a banana, an apple, and any other assortment of fresh fruit that is on sale or in season and the occasional rice cake with soy nut butter!

The first post-half run

This morning the husband got up at 6:45am to get ready to head over to our local running store at 7:30am to participate in a half marathon training group for the Parkway Half Marathon that he is going to race on May 1st.  Since he was up and going for a run, I decided I would gear up and do a nice and easy run around our neighborhood.  Not only was this my first post-half marathon run, it was also the first time I have gone running by myself.  Yep, you read that right ~ my first solo run.  Ever.  {Well maybe not ever, but definitely in the last few years}. 

As its the beginning of spring, it was perfect weather for a run this morning!  The temps were in the low 50’s and the sun was just starting to come up when I left the house.  I decided to do a 3 mile loop around our neighborhood so I put on my headset and started with a warm up walk around our court then headed out for the run.  We’ve run this loop so many times that I have a feeling I could run it blindfolded {except for the fact that I have a fear of being blindfolded and I’m pretty sure I would fall, a lot} so it was nice to be in familiar territory for my solo run.  I was a little worried about post-race pain/soreness but I felt pretty good overall.  My quads have stopped hurting {I had a lot of post-half quad soreness} and my calves were feeling loose {I also had a lot of post-half calf tightness} and I did a lot of hip stretching before the run {I experienced a lot of hip tightness during the half in the past few days since}.  I had NO SHIN PAIN OR RIGHT KNEE PAIN on this run or after, as of yet.  I did, however, have some bothersome left knee pain, off an on, during the run and I am currently icing it right now {I had severe left knee pain directly after the half and for the first few days after the race}. 

Overall, the first post-half run was good.  I am proud of myself for getting out there, solo, and having a nice 5k run!  And, being shin pain free, I’m excited for my next run and to spend the next few weeks {months, if needed} building up a solid base so I can do another half right before my big 30th birthday!

Shamrock’n Half Marathon Race Report {March 2010}

On Sunday, March 14th, I ran my first half marathon! It has been a long and rough road to this half marathon and I feel accomplished and proud that I was able to run the race and enjoy the experience.

We woke up at 4:45am on race day and left Elk Grove around 6:00am to head to Raley Field for the race. Once we were parked near the stadium, we kicked back in the car and hung out for about an hour. Around 7:20ish we decided we better get geared up and find a bathroom before the race start. Raley Field was packed! There were so many race participants and spectators. This is the 2nd largest race I have ever participated in, the largest being Run to Feed the Hungry each November on Thanksgiving Day. The line for the restroom was outrageously long, but we had time and it actually moved pretty quickly. After the bathroom break we headed back outside the stadium down to the starting line area to line up in our “wave” corral. When we registered for the race, pre-injuries, we had decided that we would run separately and Jon signed up for the “wave 2” start while I signed up for the “wave 3” start. As the race got closer and my injuries escalated, we decided that it would be better for us to run together and enjoy our first half marathon together. I am so glad we made that decision because having my husband with me was motivation for me and he was so supportive and keep asking me how I was doing, if I needed to walk, and was there to help me stretch out my hips a couple of times. I’m lucky … very very lucky. Anyways, back to race day.

There were A LOT of people lined up for the “wave 3” start and it took about 0.20 of a mile before we were really able to start jogging and around 0.50 of a mile before we were finally able to increase the speed {just a little} and the crowd started to thin out a little. I was super cold by the time the race started and my feet felt frozen so it took a while to get into a good groove and for my feet to warm up and loosen up. The first mile went back around Raley Field and then over the Tower Bridge and up Capital Ave towards the State Capital Building before turning and winding back around and eventually ending up in Miller Park along the river before circling back towards Old Sacramento and around Old Town Sac before heading back over the Tower Bridge and winding all over West Sac.

I felt pretty good for most of the race. Around mile 7 or 8 my hips started to feel very very tight and I stopped a couple of times to stretch them out. My right knee and left shin never did give me any problems at any time during the race!!! How amazing is that?!? I was able to run most of the race and only took a few 1-3 minute walk breaks. Around mile 9 I got a surge of energy, for about 0.75 of a mile due to a fun upbeat song that cam on my iPod and once I saw the 10 mile marker I was excited because I knew it was only a 5k till the finish!

Around mile 11.5 I started to feel a little sick to my stomach so I slowed my pace down and tried not to think about it. Around mile 12 I really started to feel tired and my legs started to get very heavy. I started taking a lot more walk breaks. But, I pulled it together and crossed the finish line, holding my husbands hand, and feeling a great big sense of accomplishment. After we crossed the finish line we had to climb the stairs from the field up to the concourse, that was absolute TORCHER. My quads were screaming, my hips were super tight, my calves were burning. Climbing those damn stairs took me like 5 minutes! Once we got to the top we grabbed up our food bag and took a seat in the stadium, in the sun, because all of a sudden I was freezing cold again! Once we got home I took a long, hot shower then did some stretching and proceeded to lay down, ice my knees, and watch movies for the rest of the day while snacking on pizza and breadsticks that we had delivered. My left knee was hurting really bad by the end of the day and all day the next day. But I’m still not having any right knee pain or any shin pain! I hope to go for a run this Saturday but my quads and calves are still pretty sore so we’ll wait and see how I’m feeling by then. I don’t want to push it and I don’t want to get reinjured so I’ll rest as long as I need to.

Yesterday I ran my first half marathon.  Afterwards I was exhausted!  It’s a good thing we did our meal plan, grocery shopping & lunch preparation on Saturday because I spent all afternoon Sunday laying around watching movies recovering from 13.1 miles!

The eve of my first 13.1

Tomorrow I will be running my first half marathon

If you would have asked two years ago if I thought I would ever participate in a half marathon, I would have said no.  If you would have asked me one year ago if I thought I would ever participate in a half marathon, I would have said I’ve been thinking about it, but no. 

If you would have asked me 6 months ago if I thought I would ever participate in a half marathon, I would have told you yes, but I’m not sure I can do it. 

Then something happened.  Something changed inside me and I got the urge, the drive, and the determination to participate and complete my first half marathon.  It was only 5 short months ago that I made that decision.  I had just started running again a couple months before I made this decision, using the Couch to 5k method.  I was feeling confident and strong as a runner.  I could see improvements in my running every single week, even if there were tiny little improvements, they were still there.  I spent hours researching and putting together a training plan that would start in October of 2009 and lead up to the half marathon of our choosing in March 2010.  I started out slow, got fitted for proper running shoes, and got serious about the training and completing my first half marathon.  I have been lucky to have my husband with me along on this journey.  But, it’s been a rough and often emotional road. 

I’ve never been very athletic.  Of course I dabbled in sports in high school and did my best to stay fit with sessions at the gym {very few and far between} during college, but I’m just not athletic.  I’m not a fast runner, I can’t run 5 miles without stopping to walk at some point, I get tired easily and I struggle with an inner battle of determination and pessimism.  Shortly after I was fitted for running shoes I started getting a shin splint in my left leg.  It was not that bad to start with and it was not the first time I had experienced shin splints.  Over the next several months my left shin continued to plague me.  Some days it was worse than others; some days it wasn’t there at all.  Sometime in January it started to get worse, to the point where I was in constant pain most of the time.  Then I started to get a shin splint in my right leg also.  Some days it hurt to get out bed; some days it hurt to walk; some days it didn’t hurt at all.  I went back to my running store and got re-fitted for shoes and exchanged my Asics for Muzino’s hoping the extra support for my over-pronation would help reduce my shin splints.  Then my right knee started to trouble me.  That’s when I called the doctor and was referred to physical therapy.  I was scared that I had entered stress fracture territory and felt relived when both the doctor and physical therapist ruled stress fractures out. 

Physical therapy went well.  I took it easy, did my at-home prescribed stretches and didn’t run for two weeks.  But, here it is, the day before my first half marathon, and I’m recovering from injuries.  My training hit a wall and has been non-existent for weeks.  The farthest distance I ran was 10 miles and that was back in January.  What was once excitement for my upcoming race has turned to apprehension.  I don’t know what to expect; I don’t know how my body will perform.  I don’t have any type of goal going into this race other than the goal to FINISH.  I want it to be an experience that I’ll enjoy and remember not an experience that I will regret.  And I’m scared; I’m scared of getting more injured and of not finishing.  So, I’m spending this day before the race to prepare myself mentally ~ reminding myself to listen to my body and to take it easy.  I’m reminding myself that it’s not about the time ~ it’s about the experience and it’s about finishing.  All I need to do is finish.

Adventures in Composting

We’ve been talking about starting a compost pile for a while now but had never really gotten around to.  So, I decided to add it to my 2010 Goals and last Sunday we FINALLY crossed it off our list! 

I have spent many hours on many different occasions researching and planning building a compost pile.  We have a very large section of our yard that is “unused” so we decided to build a compost “bin” out of chicken wire and metal posts in the “unused” and overgrown “garden” area.

We have been very bad with yard work this winter and we definitely have our work cut out for us this spring & summer!  Anyways, after a quick trip to Home Depot to gather supplies, we cleared out some weeds from a small 5’ x 5’ section and got started putting our “bin” together.

We have a lot of veggie & fruit scrap waste each week from our lunch prep on Sunday’s along with banana peels, apple cores, and orange peels each morning.  I’m very excited about reducing our waste and composting our scraps ~ just one more way for us to GO GREEEN.

Chicken & Rice Bowls

Sometimes you need a quick and easy meal option.  Something that is also versatile depending on what you have on hand.  This is it!

Chicken & Rice Bowls

Ingredients:

  • frozen chicken breast {1 or 2, depending on how much chicken you want to use}
  • rice {pre-cooked is the easiest for this meal, but you can cook your own if needed – we use Trader Joe’s frozen pre-cooked brown rice}
  • frozen veggies of your choice {corn & peas are an excellent combination OR shelled edamame}
  • cheese, if desired {mozzarella goes well with the chicken and brown rice}
  • salt & pepper to taste

Directions:

  • in a medium sauce pan, bring some salted water to a boil; add your frozen chicken breast; boil until the chicken is cooked thoroughly {it will float ~ but make sure to check it by cutting it open or in half}
  • while the chicken is cooking you can prepare your rice, unless you are using pre-cooked rice OR this is a good time to open the mail, wash some dishes, get your lunch ready for the next day, check your email, etc
  • once the chicken is cooked thoroughly, cook your rice and your frozen veggies {I cook my frozen veggies in boiling water on the stove top ~ or you can cook them in a glass bowl in the microwave}, dice your chicken into bite size pieces
  • once everything is ready, combine all ingredients in a bowl, salt & pepper to taste, serve topped with some shredded mozzarella cheese if desired

There you have it … a quick & easy meal.  It’s also versatile, you can add in whatever you’d like.  Want southwestern flavor?  Use shredded cheddar cheese, salsa, avocado and tortilla chips with your rice and chicken.  Want mediterranean flavor?  Use artichoke hearts and sun dried tomatoes.  How about vegetarian?  Use tofu and your favorite veggies!  The choices are endless!!!

Semi-homemade Marinara Sauce

I know I listed my semi-homemade marinara sauce on MANY meal plans, but I don’t think I every detailed how I make it.  This recipe is my go-to red sauce recipe.  I use it for everything from spaghetti and lasagna sauce to marinara dipping sauce for baked zucchini.  It’s really easy to make and very light on your budget.  I started making when we started Weight Watchers a few years ago and make our healthy eating lifestyle changes.  I wanted a go-to sauce that was low in “points” and I wanted to be able to make my own sauce so I would know and control the ingredients that were put into it.  I have never bought sauce from a jar or can since!

Semi-homemade Marinara Sauce

Ingredients:

  • 28 oz can of crushed tomatoes
  • red onion
  • garlic
  • Italian seasonings
  • EVOO

Directions:

  • chop up 3 to 5 gloves of garlic
  • chop up your onion to desired size
  • heat some EVOO in a medium sauce pan over medium-high heat, add the garlic and onion, cook until tender or caramelized {your choice, both give a different flavor/texture}
  • add the Italian seasonings, 1 to 2 TBSP
  • once the onions/garlic are cooked to your liking, add in the can of crushed tomatoes {you can also add a can of tomato sauce if you like your sauce to be a little thinner or to go farther}
  • reduce heat and simmer until heated thoroughly

This also freezes well.  A 28 oz can of crushed tomatoes will make about 6 1/2 cup servings.  If you add in a can of tomato sauce also then this sauce will go further {I like to add the tomato sauce when I’m using this for lasagna but not usually when I’m using it for spaghetti or marinara dipping sauce unless we are having company over and I am making more pasta that normal}.

Meal Plan Monday {March 8}

We had such a productive weekend!  It’s sad that Monday has arrived and back to the grind we go … it’s going to be a busy and long week between physical therapy appointments, working late to make up the time I’m out of the office for the appointments, soccer games & a play we are attending Friday night … AND our first half marathon is next SUNDAY {side note:  its been 11 days since I’ve last run … ugh}.  It sure felt like spring made an appearance this weekend … I can’t wait for warmer weather!!!

  • Breakfast ~ PRE RACE ~ English Muffin & banana
  • Lunch ~ POST RACE ~ Pizza from our favorite pizza place
  • Dinner ~ leftover pizza from lunch {above} or Turkey Burgers or leftover frozen Minestrone Soup {we’ll let our appetites decide}

**Whenever I make semi-homemade marinara sauce and I end up with extra, I freeze it so we can make a single serving of spaghetti when needed.  I’ll post the simple recipe this week also!

One of my 2010 Goals is to have a Date Night at least once a month with my husband!  We had our first Date Night in January BUT  I never got around to really posting about it {I talked about it in this Catch Up post I did}.  We decided that we would switch off who plans the Date Nights.  January was my month, as is March; and Jon had February and will return to plan April too.  And back and forth we will go for the remainder of the year!

Date Night #1 ~ January 22, 2010
For our first date night I decided to take my husband out to go bowling.  We love to go bowling.  It’s such a fun activity.  On a Friday evening after dinner at home we decided to go to our local bowling alley in Elk Grove.  BUT once we got there we learned that it was an hour and 45 minute wait for a bowling lane!  Not only did we not want to wait that long but if we would have waited then the prices would have gone up by then for “Glow” Bowling.  Instead we decided to head into the bowling alley’s bar/restaurant and grab a pitcher of beer and then play some pool!  Back in our college days we use to play pool all the time at the local dive bar we use to hang out at.  While Jon is really good at the game, I am NO good.  BUT I did however win the first game … because Jon scratched on the 8 ball!!!  We ended up drinking our beer, hanging out, playing music on the jukebox, and enjoying a few games of pool.  It was a lot of fun and a great way to unwind after the work week.

Date Night #2 ~ February 20, 2010
For our second date night Jon was in charge of planning.  He decided to take me to Color Me Mine to paint pottery.  Neither of us have ever been so we were both pretty excited to spend an evening together painting pottery!  On a Saturday night, after eating dinner at home, we headed over to the pottery studio.  Once we were there we roamed around the shelves trying to decide what we wanted to paint.  We ended up choosing matching coffee mugs and I also did a ring hold and Jon did a footed ice cream bowl.  After choosing our pottery we were able to choose our paint colors and figure out how or what we wanted to paint on our pieces.  We then spent the next 2 hours painting our pieces, chatting and enjoying spending time together on our Date Night.  Once we were finished painting the pottery I snapped this quick photo:

The pottery stays at the studio for a few days because they glaze and fire it for you!  Then you get to come back and pick up your finished, ready to use, dishwasher & microwave friendly pottery masterpieces!

We had a lot of fun and really enjoyed ourselves.  We love how the painted pottery turned out and I use my coffee mug all the time!  The ring holder has really came in handy in the kitchen ~ we placed it on our kitchen window sill so that we have a place to put our wedding rings when we are doing dishes or working/cleaning in the kitchen! 

For March, I’ll be planning our next Date Night.  AND we will also be celebrating our First Wedding Anniversary this month too.  It’s going to be a GREAT month!!!
