So What Wednesday


I thought participating in SO WHAT WEDNESDAY would be fun this week for a little bit of randomness!

Today I’m saying SO WHAT if…

I attempted to watch DWTS on Monday night, solely for the purpose to see Kendra {who I LOVE}
but ended up being so bored that I played Bejeweled on my iPhone the whole time!

My house is dirty {dusty, dirty sinks & mirrors, needs vacuuming, etc} and it shouldn’t be since I’m not working
right now and so I should have all the time in the world to clean it!

I spent all day Saturday in bed nursing an awful hangover from drinking too much Friday night!

My backyard is a disaster because we just don’t keep up with it during the winter!

I gave up sweets for Lent, and I’m doing GREAT, but I have to have an extra “something”
every night after dinner and last night it was RICE.  Seriously?  RICE.  Plain brown rice.  Weird.

There are 101 things I should be doing around the house but instead I’m drinking coffee, reading blogs, checking Facebook,
and looking forward to spending the afternoon with some co-workers from my previous job!

Return to Running: Week 2

How did I feel?

  • Monday:  It feel great!  I did a walk:run ratio of 9 min walking, 1 minute running for 30 minutes.  The first run interval was a little weird as I felt like I had to remind myself how to run again but the next two were better.  No pain while running, lots of stretching afterwards & I wore my compression sleeves for a few hours also just as a preventive measure.  Feeling great and looking forward to my next walk:run on Wednesday.
  • Wednesday:  I was out of town, visiting my family for the week in my hometown, so I drove up to the dam and walked/ran in the rain & wind.  I felt good but it was cooooold.  I did a walk:run ratio of 9:1 again.  I’m getting antsy to run more but I know I need to take it slow so I don’t end up hurt again …
  • I ended up taking the rest of the week off to rest due to (1) the weather (2) traveling back home and (3) staying out way to late on Friday night & drinking too much.

Black Bean Hummus & Homemade Tortilla Chips

I first discovered this recipe last summer when I stumbled upon it on a blog.  My old co-worker & I use to discuss, share & eat hummus all the time at work.  When I found this recipe I immediately copy & pasted it into an email to him.  We were both very intrigued and he went home that night and made a batch.  The next day at work we grubbed on it all day long.  It’s been a while since I made it and I had some tortillas that I wanted to bake into chips so I decided to whip up a batch of this black bean hummus to go along with them.  I’m sure glad I did :)

Black Bean Hummus

*When I copied the original recipe into an email for my co-worker I forgot to save the original link, yikes! 


  • 1/2 cup onion, roughly chopped
  • 2 cups of cooked & cooled garbanzo beans {or you can use 1 can of garbanzo beans, drained & rinsed}
  • 2 cups of cooked & cooled black beans {or you can use 1 can of black beans, drained & rinsed}
  • 4 cloves of garlic
  • 1 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne powder
  • 1/2 cup chopped cilantro
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • salt & pepper to taste
  • optional:  1-2 TBSP water


  1. Combine all ingredients in a food processor {or blender}. 
  2. Process until smooth.
  3. Add water, as needed, to reach desired consistency.

Homemade Tortilla Chips

  • Cut tortillas into triangles, spray a cookie sheet with cooking spray, lay out the tortilla triangles, spray the triangles with cooking spray, sprinkle with salt {if desired} and bake for 10-15 minutes at 400 degrees {watch closely, they can go from golden brown to burnt in an instant!}

Serve the freshly baked tortilla chips with the Black Bean Hummus & enjoy!

Return to Running: Week 1

I survived my first week back exercising since having over three weeks off due to my severe shin splints.  It was all walking this week but I am feeling good, not experiencing any shin pains, and ready to start walk:run intervals next week.

Week 1:  03.14.11 – 03.20.11

Monday 03.14 – rest / rest

Tuesday 03.15 – walk 20 min / walked 1.03 miles in 20:44

Wednesday 03.16 – rest / rest & stretching

Thursday 03.17 – walk 25 min / walked 1.64 in 33:00

Friday 03.18 – rest / rest

Saturday 03.19 – walk 30 min / walked 1.64 miles in 30:58

Sunday 03.20 – walk 30 min / rested instead

Total mileage – 4.31

How did I feel?

  • Tuesday:  Even though it was raining and I had a slight migraine it felt great to get back out there.  I did not have any pain while walking and just some slight muscle soreness after.  My hips were very tight and achy during the walk and after.  The next morning still some slight soreness but no pain.  I spent some time doing some hip stretches and calf raises as well as foam rolling the quads/IT bands and using The Stick on the calves. 
  • Wednesday:  I had some weird tingling in my left shin.  I can’t even describe what it felt like but it wasn’t “pain” per se.  I did some calf raises and some calf stretches as well as a few hip stretches and some yoga moves that help stretch out the hips {happy baby, pigeon & seated pigeon} as well as rolled out the IT bands on the foam roller & used The Stick on my calves. 
  • Thursday:  Walked 1.64 miles in 33:00 {including a few stops for Lucy to go #1 & #2} and felt great.  When we got done we did some toe walks, heel walks & calf raises then followed that up with regular stretching and some IT band/hip specific stretches.  Feeling good overall.  Hoping to stay that way!
  • Friday:  The weird “tingling” feeling remains but its not pain so I don’t know what it is.  Maybe its because my legs forgot what it was like to move.  Seriously.  My muscles are a little sore and I definitely feel “out of shape”, I can’t even do a downward dog.  I should not have let my yoga slack but I did.  Nothing I can do about that now except start doing it again and that I will.
  • Saturday:  Oh rain, won’t you go away already?!?  Still feeling good and ready to do some run/walking next week!  Sometimes I have the weird tingling feeling as it comes and goes … I’m ready for it to go away forever too especially since I don’t know what the heck it is.
  • Sunday:  I had planned on walking both Saturday & Sunday but decided to take a rest day instead since I’m going to do my first walk/run on Monday.  I’m ready …

Flashback: Wedding Rehearsal Dinner

Last night we returned to Sudwerk’s for dinner and enjoyed drinks & good eats while watching the stormy sky darken to night as we overlooked the river and our wedding location, Lake Natoma Inn, from our table by the window.

Today we had “date night” and tomorrow is our 2nd wedding anniversary!

Freezer Veggie Burgers

This is such a great recipe because you can make these veggie burgers in advance them freeze them and when you’re ready to eat them you just pull them out of the freezer and pop them in the oven for 30 minutes.

Freezer Veggie Burgers
Adapted from:  Taste of Home Comfort Food Diet Cookbook, 2011


  • 1 1/2 cup kidney beans {pre-cooked from dried} OR 1 16 oz can of kidney beans drained & rinsed
  • 1/2 cup old fashioned oats
  • 2 TBSP ketchup
  • 1/2 cup finely chopped mushrooms
  • 1 medium onion, finely chopped
  • 1 medium carrot, shredded
  • 1 small sweet red pepper, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/8 tsp pepper


  1. Place the beans, oats and ketchup in a food processor and pulse until blended.  Transfer to a small bowl and stir in the veggies, garlic, salt & pepper.  Shape into six 3-inch patties; wrap each in plastic and freeze. 
  2. When ready to use, unwrap burgers and place on a baking sheet coated with cooking spray.  Bake at 350 degrees for 30 minutes or until heated through, turning once.  Sever on buns of your choice.

2008 in San Diego

For Spring Break in 2008 we drove down to San Diego to spend a few days with our friend Ryan.  We were lucky enough to be there for St Patrick’s Day and we went to a festival in downtown San Diego.  We had soooo much fun! 

3.  We don’t eat corned beef & cabbage around these parts be we do enjoy partaking in the “drinking” aspect of this “holiday” so we’ll be heading out to have a drink tonight and I’m very excited {for Lent I gave up “sweets” but I also decided to only drink one day a week --- today is that day for me!}

Chili Pasta Bake

A few weeks ago when I was rinsing out an empty diced tomato can to recycle after making dinner I spotted a recipe on the back.  It intrigued me, as I’m constantly looking for new recipes {which, really, I shouldn’t be because my darn recipe binder is overflowing but I just can’t help it}.  I wrote it down on a some scratch paper and then added it to my weekly meal plan for this week.  BUT yesterday evening I found myself curled up in a ball on my couch fighting a massive migraine.  Luckily I was able to convince my amazing husband to make dinner.  After all its a pretty simple recipe and I knew he would have no problem.  Simple ingredients, simple instructions, and a tasty husband-made meal.  Sometimes that is what life is all about :)

Chili Pasta Bake
Adapted from the label on a can of Hunt’s Diced Tomatoes


  • 10 oz penne pasta
  • 1 lb of ground turkey
  • 1 cup chopped red onion
  • 2 TBSP chili powder
  • 1 can diced tomatoes
  • 1 8 oz can of tomato sauce
  • 1 cup salsa
  • 2 4 oz cans of diced green chilies
  • 2 cups shredded cheese


  1. Preheat your oven to 350 degrees.
  2. Cook pasta according to directions on the pasta box.
  3. Cook meat & onion until meat is thoroughly cooked.  Add chili powder and cook for an additional minute or two.
  4. Add the diced tomatoes {do not drain}, tomato sauce, salsa, and green chilies.  Cook for an additional 5 minutes or until slightly thickened.
  5. Combine the pasta and the meat sauce in a 13x9 baking dish, top with cheese and bake for 20 minutes.

Resting: Week 3

It’s been 24 days since I ran …

I’m calling this week, and the next few weeks, “Jesse’s Return to Running”.  I’ve got it all planned out {of course I do} and I’ll be beginning with some walking for the first week then slowly, and I mean slowly, I’ll start adding in a few running minutes during walking until I can build back up.

My shins/legs are feeling great and I’m anxious to go for my first walk tonight.  In the rain.  Of course its raining the day I want to start exercising again.  It just wouldn’t be almost spring in Northern California without rain.  And just my luck that it was cloudy all day then decided to start raining just about an hour ago.  All well … I guess I’ll be busting out my rain jacket along with dusting off my running shoes & Garmin when I head out the door later.  Honestly, I don’t care that its raining.  I’m still going for my first walk and I’m ready! 

Now, lets just hope the legs are ready too!

I just technically I did do my first walk on Sunday when I walked from Raley Field across the Tower Bridge to Old Sac and then back to Raley Field to watch my husband {and all our running group buddies} in his 4th half marathon {Shamrock’n Half}.  It was around 2 miles total --- at a nice and slow pace --- and I felt just fine :)

Meal Plan Monday {Mar 14}

For the second week  in a row we failed at sticking to our goal of not eating out.  After a long day at jury duty on Wednesday I convinced the husband to go our for a sushi dinner instead of cooking.  At least all the rolls were 50% off and we only had water so those two factors saved us a bundle I’m sure.  Wednesday was also the start of Lent and this year I {we} gave up sweets {cookies, cake, cupcakes, ice cream, frozen yogurt, candy} except for ONE DAY {our 2nd wedding anniversary which is coming up on Monday the 21st} & are restricting our alcohol consumption to only one day were week {Mon-Sun}.  So far, so good … and I’m confident that we will be able to stick to this goal --- we gave up “sweets” last year too.  And it feels good because I’ve been definitely over indulging.

Today in my life

I saw this out there in blog land someplace and I thought it would be fun to do instead of a Three Things Thursday post.


Outside my window ... is a mixture of sun and clouds.  The weather peeps say its going to be in the 60’s here today with rain this afternoon.

I am hearing ... the heater, the dog snoring, the keys on my keyboard, my cat trying to claw her way through the medal blinds to sit in the window.

I am thinking ... of where we should go for our 2nd wedding anniversary, what kind of work I want to do / where I should apply, and of maybe taking a long warm shower soon!

I am thankful ... for my amazing husband and the fact that he has a wonderful job that he loves.

I am reading ... In Defense of Food by Michael Pollan {I just started this yesterday at jury duty after I finally finished The Girl with the Dragon Tattoo}

I am hoping and praying ... to find a job that I will love and that my sister-in-law’s pink slip gets rescinded again!

I am wearing ... slippers, striped fuzzy slipper socks, plaid pajama pants, a purple t-shirt and a long blue button up sweater!  Haha.

I am creating ... a poster of our wedding vows to hang in our home and I’m also working on our wedding scrapbook.

From the kitchen ... tonight is leftover night, yum-o!

Around the house ... the kitchen is a disaster and the dishes are piled a mile high since I was at jury duty yesterday and didn’t get a chance to do them and there is a lot of clutter that needs to be picked up today … and I should probably make the bed too! 

Plans for the rest of the week ... I’ve got a busy weekend ahead of me so I’ll probably spend tomorrow cleaning the bathrooms, dusting, vacuuming and doing laundry.  Tomorrow night we are going to a potluck that a fellow member of our running group is hosting, Saturday I’ll be attending a candle party in the afternoon and Sunday is the husbands half marathon that he has been training for!

Resting: Week 2

Its been 17 days since I’ve ran …

I went back to my doctor for a follow up appointment last Friday.  Thankfully the pain is completely gone in my left leg but I’m still having some minor pain in the right leg {top of my shin, under my knee, on the inside of the leg} that was about a 4 on the pain scale of 1-10 in the mornings when I got out of bed {its now about a 2}.  The doc instructed me to continue my muscle relaxers at night and to take the prescription ibuprofen as needed for pain especially in the mornings if the pain is evident.  She also told me to take one to two more weeks off {depending on the lingering pain in my right leg} and then I can start incorporating some walking BEFORE I start running again.  Sounds like a good plan to me.

The first week of rest was hell.  I totally was feeling sorry for myself and I hated it.  The second week was much better.  I really miss running, and meeting up with our running groups on Saturday mornings.  But I’m also totally missing my daily walks with Lucy the puppy and the husband.  I can’t wait until I can start walking / running again.

The good?  No pain when standing or walking {other that that pesky pain on the right leg in the mornings which incidentally goes away and does not return until the next morning as long as I take an ibuprofen when I get up}, no pain when sitting on shins or crouching down.  The bad?  The waiting for the resting to be over … and no referral to a sports doc.  I guess that it a good thing too since it means I don’t have a serious injury {fracture} and I’m healing / doing better.  However, if it comes back … I’m gonna be one pissed off girl!

Sloppy Jose Supper

I urge you to add this to your meal plan or run to the store tonight to pick up the ingredients and make it. It’s quick, easy & sooo good.

Sloppy Jose Supper - edited

1 pkg of corn bread/muffin mix {or make your own cornbread, that’s what I do}
1 lb. lean ground beef I use ground turkey
1/2 cup chopped sweet red pepper {or a whole medium red pepper if you hate to waste like I do}
1/3 cup chopped onion {I love onion so I think I used about 1/2 a cup of diced red onion}
1 celery rib, chopped
2 garlic cloves, minced {um, I love garlic too and almost always at least double the amount a recipe calls for}
1 chipotle pepper in adobo sauce, chopped {I omit since I’m not a fan of the flavor}
1 tsp chili powder
1 tsp cayenne powder {I add this since I don’t use the chipotle pepper in adobo sauce}
1 tsp ground cumin
1 1/4 cup salsa
2 tbsp chili sauce {or taco sauce if you have no idea what chili sauce is, like me}
2/3 cup shredded Mexican cheese blend
Toppings of your choice {I enjoy sliced black olives, sour cream, guacamole, dice tomatoes, sliced green onions … }


  1. Prepare and bake cornbread according to the package directions {or make your own with your favorite cornbread recipe}.
  2. In a large skillet cook the meat, red pepper, onion and celery over medium heat until the meat is cooked thoroughly. Add the garlic, chipotle pepper, chili powder and cumin; cook for about 1 minute longer.
  3. Stir in salsa and chili sauce then simmer for about 5 minutes until the sauce is thickened.
  4. Cut corn bread into 9 squares {this recipe serves 5 so you will have some leftover cornbread} and top each with 2/3 cup meat mixture and 2 TBSP cheese and a your other favorite toppings.
  5. Enjoy!

Meal Plan Monday {March 7}

Well, last week I made a goal to try to eat and not deviate from the meal plan.  We almost did it.  We made it all the way until Saturday night when we decided to grab some grub out when we were sitting at a bar enjoying some beers.  Epic fail.  We ended up sharing fries, fried calamari, and a flatbread pepperoni pizza.  The worst part is that we spend 1/6th of our monthly budget on that one meal AND the ground turkey was already defrosted and waiting for Sloppy Josés to be made but we caved instead and ate out.  So, the Sloppy Josés got moved to today and we’ve once again got a goal to follow the plan and to not eat out this week

Race Bib Scrapbook

Over the past several years we’ve collected quite  a large stack of race bibs and I decided I wanted to put them all in a scrapbook.  This is a project that I bought all the supplies for sometime last year {as it was on my 2010 goals and carried over to my 2011 goals} but I kept putting it off until recently.  It was a very simple and quick project so I have excuses for why I didn’t do it earlier.  AND I’m very, very happy with the way it turned out.  Once I completed this project I started immediately on a scrapbook of wedding related paraphernalia BUT that project is much larger and it  is taking a lot more time. 

I used one standard 12x12 scrapbook and ended up using two expansion packs but I still ran out of inserts and our first race of 2011 is not in the book {although the page is completed} because my craft store has not got anymore of the expansion packs in yet.  I keep going back to check because I’m positive I’m going to need expansions for the wedding scrapbook too.

Date Night: February 2011

For our February Date Night we decided to take advantage of President’s Day {since the husband was off} and go bowling … during the day {when its cheaper!}. 


We only paid $15 for shoe rental & two games each {which means we’ve only spend $20 so far this year for date nights}!  What a steal.  We originally tried to go to our local bowling alley but it was PACKED so we drove to into South Sac and went to a bowling alley that is substantially smaller and had way less people hanging out / bowling. 

It had been quite a while since the last time we bowled together, about a year and a half {or more}.  Jon is really good and I am not!  But we had fun, and that’s all that matters :)

Currently ReadingThe Girl With The Dragon Tattoo by Stieg Larsson --- this is not my typical kind of book to read but I’m trying to broaden my horizons past “love novels”, it took me a while to get involved in the book but I’m finally starting to really like {just over 1/2 was through it}

Current shame-inducing guilty pleasure:  still enjoying not having a job

Current Obsessions:  GIRL SCOUT COOKIES

Current excitement:  I finished my race bib scrapbook and I started my wedding scrapbook {which I hope to finish before my 2nd wedding anniversary in about two weeks}

Current triumph:  crossing goals off my 2011 goal list :)

Current bane of my existence:  GIRL SCOUT COOKIES

Current goal:  to get past the shin splints so I can run again!

Current need:  still need to find a JOB

Resting: Week 1

It’s been 11 days since I’ve ran …

The ibuprofen prescription and the muscle relaxers, paired together with RESTING, are definitely working since my shins/legs are feeling a lot better.  I can put weight on my left leg again and walking is not troublesome anymore.

The first week I sat around feeling sorry for myself, worried I was going to gain weight but still eating every Girl Scout cookie I could get my hands on while staying in my pj’s and watching endless TV and movies all day long.  This week, I am feeling better.  I’m back on track with my eating and I even started a “new” at-home boot camp that focuses on upper body, core, and butt {no lower body and no strain/weight on the legs except when standing for some of the upper body moves}.

I’m very anxious to get back to running and walking but I don’t know how long it will be until I can.  I have a follow up doctor appointment tomorrow morning and I’m still going to ask that she sends me to see a sports doctor but I’m hopeful that she will.  Especially since the pain has lessened and I seem to be getting better.  For now, the only thing I can do, is continue to “rest” the legs and focus on my new boot camp and wait to see what the doc says tomorrow …

(F) Favorite Color: its currently shades of green {it changes all the time}

(O) Overnight Hospital Stays? I’m thinking yes when I was a little girl and got bit by a dog and had to have surgery but I’m not sure about that since I was two and don’t remember …

(P) Pet Peeve:  people that are inconsiderate; slackers; people that don’t know how to drive; people that take up the whole sidewalk or trail when I’m running and don’t move or make room for me to pass!

(T) Time You Wake Up? Whenever I feel like it since I’m a lady of leisure :)

(V) Vegetable You Dislike: brussel sprouts and lima beans.  Ew.

(W) What Makes You Run Late: I’m usually on time or early, hardly ever late.  If I am late; its not my fault.  I’ll blame the husband.  And if I’m not early, I feel like I’m “late”.  I always prefer to be early.

(X) X-Rays You've Had Done: teeth; my knee when I was in high school due to some pains I had when running track; my back after my car accident {several times} --- those are the only ones I can think of

(Y) Yummy Food You Make: since all the food I make is yummy I’ll just list a few things I’ve made recenlty:  no-bake granola bars; white chocolate oatmeal cranberry cookies; blueberry & yogurt muffins; zucchini & oat muffins; copy cat chicken rice-a-roni; chicken noodle soup; spicy roasted chickpeas; black bean burgers; vanilla wafers; whole wheat blueberry muffins … I could go on & on & on … I LOVE cooking & baking!
