Crumbled Tofu Taco’s

I’ve been wanting to share this “recipe” for a while now and finally remembered to take some photos when I was cooking it the other night.  I love to make this on nights when I know we’ll be eating late because its so easy and comes together so quickly.  I love tofu and have always enjoyed finding new ways to enjoy it.  I’ve seen a lot of “tofu taco” recipes but they all called for pan fried tofu cubes, which I tried once.  But I decided it would be easier to crumble up the tofu and toss it with some taco seasonings.

Ingredients

  • 1 pkg of firm/extra firm tofu
  • taco seasoning
  • taco toppings of your choice
  • tortillas

Directions

  • Remove tofu from pkg & drain then wrap in clean dish towels.  I top my wrapped tofu block with some cook books to help squeeze the extra water from it for about 10 minutes.

  • Remove the tofu block from the dish towels and using your hands crumble it into a microwave safe bowl.  Once the tofu is crumbled, add 1-2 tbsp of your favorite taco seasoning {I used homemade}.

  • Turn the oven on to broil and line a cookie sheet with foil.  Place the tofu into the microwave for 1 minute.  Lay your tortillas on the cookie sheet, top with 1/4 cup of tofu, then 1 tbsp shredded cheese.  Place in the oven under the broiler and keep a close watch on it until the cheese is melted and the tortillas are cooked to your desired crispiness.  {You can also cook the tofu in a pan and warm your tortillas in the microwave and skip the broiler but I like to broil them because its gets the cheese really melted and doesn’t take that long.}
  • Remove form the oven and top with your favorite taco toppings.

  • Serve immediately and enjoy :)
