Meal Plan Monday {June 13}

I got up early this morning and headed to the gym for a 3-part 2-hour workout {warm-up on the stationary bike, boot camp style strength calisthenics workout, and elliptical} and when I got home my husband had prepped the kitchen so I could start painting.  It’s going to be a long process which will probably take most of the week but I’m very happy to finally be painting another room {previous rooms we’ve painted include our master bedroom, our “office” and our living room/entry way --- which I haven’t blogged about}.  I have a feeling that some meals may get switched around this week, since tonight's planned salad has already been nixed from the meal plan! 

I’ve been over the white walls of the kitchen/dining room for a while now and I am really enjoying the new blue-ish color :)


Here is an in-progress photo.  This is as far as I’ll get today.  I was able to get two coats on and now it will dry for a few hours then we can remove the plastic tonight and get the kitchen re-situated {for eating & dish cleaning purposes} and tomorrow we’ll start another section. 



Monday ~ Taco Salad  Frozen Egg Rolls & Mini Bagel Pizza’s

Yikes, we decided to scratch the planned salad from tonight’s menu due to the fact that its already almost 4pm and the kitchen is still in shambles which means I can’t clean & cut lettuce/veggies.  We’ll be enjoying some goodies from the freezer instead :)

Tuesday ~ Meatball Sandwiches

Yum-0!  We both love meatball sandwiches so I figured it was time to make some at home with Trader Joe’s Frozen Turkey Meatballs and a whole wheat French bread loaf :)

Wednesday ~ Leftover Turkey Meatloaf Muffins {freezer}

When I made this recipe a couple of weeks ago {in the muffin tin} I froze half and we’ll get to enjoy them for dinner this week!!!

Thursday ~ Chicken and Rice Bowls

At least I picked quick & easy meals for this week knowing that the kitchen was going to be mostly a disaster zone!

Friday ~ Spaghetti

Saturday ~ 6 mile run in the AM; candle party at my sis-in-law’s AND my dad & step-mom arriving in the afternoon; BBQ’ing dinner :)

  • Breakfast ~ Bagels
  • Lunch ~ Green Monster & Sandwiches
  • Dinner ~ BBQ’d Turkey Burgers stuffed with Feta Cheese with potatoes {sliced, cooked in foil packets on the BBQ}

Sunday ~ Father’s Day ~ Golf in the morning with my dad & BBQ’ing in the afternoon for “supper” since my dad will want to hit the road to home earlier rather than later

  • Breakfast ~ Waffles or Pancakes
  • Lunch ~ Green Monster & light snacks
  • Supper~ BBQ’d Sausages with Grilled Veggies & Corn on the Cob
