Meal Plan Monday {July 11}

I must share that the oil-free {and nut free} pesto recipe that I listed last week was a BIG hit.  We LOVED it.  In fact, we LOVED it so much that I bought two big bags of fresh basil at the Farmers Market on Saturday and I plan to make two more batches this week so I can freeze some for future use!  I highly suggest you head over to Eat, Live, Run and print out the recipe and make this ASAP.  We had it with whole wheat spaghetti the first night {delicious} and used it in chicken panini sandwiches the second night {delish}.  BTW, I used yellow miso because my store didn’t have white miso.  The recipe made 1 cup AND 1/4 cup not only goes a long way but it is only 1 WW Pts Plus :)

This week we’ve got lots of zucchini coming out of our garden finally and I’m looking forward to grilling it, roasting it, and sautéing it :)


Monday ~ Grilled Polenta Stacks

Grilled polenta {store bought} rounds + grilled zucchini rounds + mozzarella cheese + marinara sauce

Tuesday ~ Tofu Parmigiana

As soon as I saw this recipe I knew I was going to have to make ASAP. 

Wednesday ~ Chicken & Rice Bowls with roasted zucchini

Simple meal to get dinner on the table quickly after an evening class at the gym

Thursday ~ Cheesy Stuffed Giant Zucchini

Did I mention we have an abundance of zucchini?  And one very large one that I’ll be using to “stuff” for this recipe!

Friday ~ BBQ Turkey Burgers with grilled zucchini “fries”


  • Breakfast ~ Cereal and Green Monsters
  • Lunch ~ Sandwiches with veggies & fruit
  • Dinner ~ Spaghetti


  • Pre-run Breakfast ~ Bagels
  • Post-run Snack ~ Green Monster with veggies & fruit
  • Lunch ~ Yearly trip to the California State Fair {we got free tickets!}
  • Dinner ~ leftovers unless we are too full from fair food :)
