Meal Plan Monday {Aug 1}

I’ve got a simple meal plan this week and I’m looking forward to eating lots more fresh veggies from my garden :)

We’ve got a “BBQ” theme for part of the week {quick and simple with less dishes!} and we’ll be having our pre-long run go-to spaghetti dinner on Saturday since we’ll be doing our long run {Fall Race Training} on Sunday this week.


Monday ~ Chicken Nuggets with grilled zucchini

Quick & simple! 

Tuesday ~ “Fried” Polenta with Zucchini and Tomatoes

We didn’t use up the polenta last week since we went out instead of making Polenta Stackers on Sunday … I’m going to dice up the polenta and lightly fry it in some olive oil with diced up zucchini from the garden and fresh diced tomatoes then serve it topped with shredded mozzarella cheese :)

Wednesday ~ Tofu Tacos

One of my favorites!!!

Thursday ~ BBQ Burgers

Friday ~ BBQ Chicken Sausages

Saturday ~ Spaghetti

Sunday ~ BBQ Burgers
