Meal Plan Monday {Sept 12}

It was inspiring to see so many American Flags flying yesterday on the 10 year anniversary of 9/11 --- including several on our street --- 6 houses in a row, including ours {the first one}.   I also saw several around the neighborhood in the evening when I took Lucy for a walk and several during my 10 mile race yesterday morning --- most notably a couple in front of me lined up at the start, both dressed in red, white & blue with two mini American Flags hanging out of her hydration pack :)

We had yet another successful week last week and stayed on plan.  We’re now at 22 days without eating out :)

We’ve got a couple of meals that will allow for leftovers again this week and a I’m starting to use up some meals I’ve previously frozen.  We’ve run out of cooked black beans and cooked brown rice so I spent the morning cooking up 1lb of beans and 9 cups of rice {which I keep in the freezer until needed}.  We are trying a new recipe this week that I’m super excited about :)

Monday ~ leftover pasta

Last Friday I made a big pan of baked pasta with loads of fresh veggies.  It was more than I anticipated so we’ve got leftovers for tonight :)

Tuesday ~ Black Bean & Corn Skillet over Brown Rice

A quick and easy favorite :)

Wednesday ~ Crockpot Calbasitas

A new recipe I’m excited to try this week.  When Monica at Run Eat Repeat posted this I knew I was adding it to my meal plan ASAP.  Any excuse for a new way to use up zucchini :)

Thursday ~ leftovers

Friday ~ Spaghetti / Pasta with Marinara Sauce

Saturday ~ Turkey Burgers

Sunday ~ Sloppy Joses Supper 

I froze some leftovers of this dish a month or two ago and I’m making an effort to use up some of the meals I’ve frozen before fall soup season arrives because I love to make big batches of soup and freeze it for quick meals :)

I try to meal plan. I'm getting better at it. It's hard because I work some nights...I love your ideas tho
