Meal Plan Monday {Oct 10}

We’ve made it 50 days without eating out!  The first few weeks it was hard to fight the temptation to go out to eat but as the days and week progressed it has been easier and easier.  It helps that we don’t have a lot of extra money in our budget right now and that we are trying to cut corners wherever we can.  This week we are trying 4 new recipes!  I have felt very uninspired in the kitchen lately so I’m hoping having a few new recipes on the meal plan will help me get out of my funk.

Monday ~ Quinoa Cakes with Tzatziki Sauce

I’ve had this recipe saved since the day it popped up in my Google Reader and I’m very excited to try these this week.  I’ll be omitting the cottage cheese from the tzatziki sauce recipe since we don’t have any and don’t have any desire to either – we are not fans of the taste or texture. 

Tuesday ~ Crock Pot Chicken Taco Chili

I found this recipe months ago when I got recommitted to WW and was searching for WW recipes.  I’m excited its finally on my meal plan this week.  It’s only 5pt+ for 1 1/4 cups!  Woohoo :)

Wednesday ~ Buffalo Sloppy Joes {recipe below}

While Sloppy Joses are my go-to favorite “Sloppy Joe” recipe, when I saw this recipe in my Taste of Home magazine I knew I had to make them.  The husband is a big fan of anything with buffalo sauce so I think they’ll be a big hit.  I knew I was going to make these soon so when I cooked up some ground turkey a couple of weeks ago for Turkey Stroganoff I saved half of it and froze it to use for this recipe.  We’ll be using feta cheese instead of blue cheese ‘cause we’re not big blue cheese fans.

Here is the full recipe from Taste of Home ---

Ingredients:
2 lbs extra-lean ground turkey
2 celery ribs, chopped
1 medium carrot, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 can {8 oz} tomato sauce
1/2 cup reduced-sodium chicken broth
1/4 cup Louisiana-style hot sauce
2 tablespoons brown sugar
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1/4 teaspoon pepper
8 hamburger buns, split
1 cup {4 oz} crumbled blue cheese, optional

Directions:
In a Dutch oven, cook the first five ingredients over medium heat until turkey is no longer pink.  Stir in tomato sauce, chicken broth, hot sauce, brown sugar, vinegar, Worcestershire sauce and pepper; heat through.  Serve on buns; sprinkle with cheese if desired.  Yield:  8 servings.

Friday ~ Spaghetti

Simple pre-run meal --- we’ll be running 18 miles on Saturday again :)

Saturday ~ Homemade Pizza Rounds

Roll out your pizza crust, add sauce and cheese and toppings, roll up like cinnamon rolls, cut into rounds, bake.  This will be my first attempt to bake pizza like this --- wish me luck :)

Sunday ~ Freezer Veggie Burgers

This will be the last from the batch I made in March :)

How did your garden do this year? you havent shown us pics, or talked about it.
