Meal Plan Monday {Oct 3}

I had an amazing weekend! We ran the Urban Cow Half marathon {race recap HERE}, our first big “A” race of the fall race season. And its October --- my birthday month {I'll be 28 again for the fourth year in a row, in case you are wondering, LOL}. The weather is starting to change and rain is predicted for a few days this week. With the half marathon behind us we will be focusing more on CIM training now and we’ve got a few other fun runs before marathon day in December. We are at 43 days without eating out and still going strong! I’ll actually be heading to my mom’s house for a few days this week with Lucy so the husband will have to fend for himself for dinner a couple of nights this week :)

Monday & Tuesday ~ the husband has a selection of frozen chicken nuggets, frozen egg rolls, boxed mac-n-cheese from Trader Joe’s or Joe O’s {Trader Joe’s brand spaghetti-o’s} to choose from

Wednesday ~ Chicken Salad with homemade dressing

We got a deal on bagged salad this week at the grocery store which was perfect timing since the husband mentioned last week that he was craving a big salad!

Thursday ~ Spaghetti/Pasta

Friday ~ leftover pasta

Saturday ~ Turkey Burgers and Baked Potatoes

My dad will be in town staying the night with us so we can take him to the airport in the morning!

Sunday ~ Tofu Tacos
