Meal Plan Monday {Dec 5} + WW {Wk29}

I’m looking forward to using up the last of the leftover turkey breast from Thanksgiving in a soup recipe this week. Last week the Turkey Noodle Soup {based on this recipe} turned out so good!

I’m also looking forward to making a big batch of Weight Watchers Garden Vegetable Soup this week to eat for lunches. I’ll share the recipe if it turns out good :)

Monday ~ leftover buffet

We’ve got an assortment of leftovers in our fridge that need to get eaten {soup & salsa chicken from dinners last week; half a baked potato; pizza} so we’ll be eating all that up tonight!

Tuesday ~ Turkey Tortilla Soup

Based on THIS recipe but with shredded leftover turkey breast from Thanksgiving!

Wednesday ~ Spinach & Feta Pasta

I can not get enough of this yummy pasta dish! Its so simple and easy yet tastes so good :)

Thursday ~ leftover Turkey Tortilla Soup

Friday ~ Pasta with marinara sauce and turkey meatballs

Saturday ~ Tofu Fried Rice

I really like how versatile fried rice is as well as how quickly it comes together. We really enjoy both chicken and tofu in our fried rice and this week I decided to go with tofu {its cheap after all}.

Fried Rice

Ingredients:
cooking spray
2 large eggs, lightly beaten
1 cup shredded or finely diced carrots
1 cup sliced scallions, divided
3 cups cooked rice
1/2 cup frozen peas, thawed
1/4 cup soy sauce
chicken or tofu

Directions:
Cook the eggs in a large non-stick pan with a couple of sprays of cooking spray until they are scrambled well. Remove from pan; set aside.

Add carrots and all but 2 tablespoons of the scallions; sauté until carrots are tender. Stir in tofu {cut into squares or crumbled} or chicken {cooked and diced or shredded}; after a few minutes add in the cooked rice, peas and soy sauce – cook until heated through. Gently add in the cooked eggs and remaining scallions until heat through.

Weigh-in {12.05.11} = 136.8 lbs
Week 29 Less = –2 lbs
Total Weight Loss = –13.4 lbs
Starting Weight {05.16.11} = 150.2 lbs
I earned 12 activity points
I exercised 6 out of 7 days
*Another week where I didn’t track everyday. With the change to the program my new daily points are 26 and I think this will help a lot but of course that means I need to start tracking everyday which is my downfall right now.

I love WW vegetable soup. I use whatever veggies I have. Sometimes I put salsa in it to spice it up. Yum-o
