Meal Plan Monday {Jan 2} + WW {Wk33}

Happy New Year! May 2012 bring you all the things you wish for and the things you may be too afraid to dream for including happiness, love, and luck!

Recently I’ve been thinking about how I’ve been meal planning for so long that I can hardly remember what it was like to aimlessly wander a grocery store, purchasing items at random, without any real idea as to what I’d be cooking that week. I don’t think I could ever go back to not meal planning!

Monday ~ Refried Black Bean Burritos with roasted zucchini

So, we bought a can of refried black beans a couple of weeks ago and put this on the meal plan {a few times} … but then we never ended up having it. Sigh, SMH. So simple – heat & eat – and a perfect meal to reset the diet and start the week off :)

Tuesday ~ Tofu Fried Rice with salad & homemade ranch dressing

I just made this a few weeks ago but its also such a simple meal that makes a lot of food. It will be perfect paired with a simple salad and we’ll have plenty of leftovers :)

Wednesday ~ leftover fried rice & salad

Thursday ~ Soup {from the freezer} with roasted zucchini

We’ve got a small stock pile of soup in our freezer that needs to be eaten and with the chilly temps forecasted for the evenings/overnights this week, soup will be a perfect warm-me-up meal :)

Friday ~ Pasta with homemade marinara sauce {from the freezer}

Friday night IS pasta night in our house :)

Saturday ~ leftover pasta

Sunday ~ Pineapple Jerk Chicken

One of our favorite meals that I often forget about it.

Weight Watchers Week 33 {12.26.11 – 01.01.12}
Weigh-in {01.02.11} = 142 lbs
Last weigh-in was 12.19.11 @ 138 lbs
Week 31/32 Gain = +4 lbs
Total Weight Loss = –8.2 lbs
Starting Weight {05.16.11} = 150.2 lbs
*My lowest recorded weight since I restarted WW in May of 2011 was 133.8 on 10.03.11, where I was down 16.4 lbs --- since then I’ve gained back half of that.
I earned 20 activity points
I exercises 4 out of 7 days
*I didn’t weigh-in for week 31 {the Monday after Christmas}. Stepping on the scale this morning I knew that my weight had increased more than the 1-2 lbs that its been creeping up every week. While moderation should have been key for me during the holiday season, it was not how I approached food/goodies. I binged. Big time. And now I’m dealing with the outcomes {tighter clothes, feeling run down & lethargic, lack of motivation to eat better and moderate my serving sizes}. But its a new year, and a new week, and there is always time for a fresh start. I am back to tracking all my food {starting today} and I’m done with overindulging in sweets & alcohol. I’m also done with eating out. My goal for January is to eat out 3 times or less {due to family birthdays & travel} AND I hope to make better choices if/when I do eat out. This is such a vicious cycle. I want 2012 to be the year I break it.

meal plans are such a great idea! now that my work will be dying down I should start doing this....or I could just come over to your place for dinner ;) lol
