Meal Plan Monday {Jan 9} + WW {Wk34}

I had a great week last week. I didn’t eat out; I stayed on point; I exercised every single day; and my cooking mojo returned! I’m hoping this week will be a repeat. Though I am very much looking forward to birthday celebrations this weekend for both my mom and my niece :)

How was your week last week?
Did you cook anything spectacular? I didn’t make anything new last week but I enjoyed being back in the kitchen cooking tried & true recipes. This week I’m looking forward to making a new chili recipe {see below}.

Monday ~ leftover Pineapple Jerk Chicken from yesterday & salad

I’m glad we are having leftovers tonight since that will give me some time to prep all the salad fixings for the week! The best part about salads = they are packed with veggies AND low in WW pts!

Tuesday ~ Veggie Burgers {from the freezer} & salad

Trying to eat up some of our freezer foods since recently one of the de-cluttering tasks that I did {from this calendar} was to clean our the freezers.

Wednesday ~ Turkey Chili with Lentils & salad

Last week Giraffy at 365 Days of Awesome shared an article about Healthy Foods on a Budget which I really enjoyed reading since I eat 97% of the listed foods on a daily basis. However, the list included LENTILS and that is one grain I have not yet tried. So I set out to rectify that this week. I tweeted Giraffy to see if she thought lentils would be good in a Turkey Chili and then set about putting together a recipe based upon a Rachael Ray chili recipe . {I’m basing my recipe on THIS recipe --- no cinnamon & adding lentils and kidney beans + an extra 3/4 cup of water & some tomato paste if necessary to thicken it up.} I think the results are going to be yummy!
PS – a bag of lentils is super cheap … $1.29 at my local Bel-Air grocery store! BEING HEALTHY DOESN’T HAVE TO COST A LOT!!!

Thursday ~ Pork Chops with smashed red potatoes, green beans & salad

I have not cooked pork chops in years! And, actually, I won’t be cooking these either --- the husband will be grilling them. They were on sale last week so we got two good sized boneless chops for under $3 --- score :)

Friday ~ Pasta with marinara sauce

Nothing new here :)

Saturday ~ TBD ~ Celebrating my mom’s & my niece's birthdays!!!

I’m 99% positive that we’ll be having pizza … and I’m sure there will be some sort of CAKE. I will not over indulge. I will not over indulge. I will not over indulge.

Sunday ~ leftover chili

Yeah leftovers! I really think chili leftovers are the best {well, spaghetti leftovers are actually the BEST} since the longer the chili sits the better the flavors blend together. Yum-o.

Weight Watchers Week 34 {01.02.12 – 01.08.12}
Weigh-in {01.09.12} = 139.6 lbs
Week 33 Loss/Gain = –2.4 lbs
Total Weight Loss = –10.6 lbs
Starting Weight {05.16.11} = 150.2 lbs
I earned 42 activity points!
I exercises EVERYDAY
*I did so good this week & I am very proud of myself. I stayed on point It felt good to eat healthy meals at home with portioned food and lots of fresh fruit/citrus for snacks AND homemade WW Veggie Soup for lunch all week {I made it a few weeks ago and froze the leftovers}. This week may not go as well since there were will a couple of family birthday celebrations but I am determined to enjoy in moderation and not to overindulge. It feels really good to see how high my activity points were this week with my return to running AND the gym :)
