Meal Plan Monday {April 16}

Happy Marathon Monday and Good Luck to all the runners in Boston today!

I finally posted my recent half marathon race recap here --- read it HERE.

I just realized I forgot to post my Thankful post on Friday.  Boo.  Look for that tonight.

Last week:

Three successful days at the gym for a total of 2 hrs, 11 minutes of cardio (stationary bike, elliptical, stair climber)

One day of yoga stretches

Four successful days of strength/PT Exercises

Three runs:

Plank-a-day continues, going strong on day 107

Here’s this weeks “plan for the week”:

Monday ~ AM: gym; PM: run 3 miles

Tuesday ~ AM: gym

Wednesday ~ AM: gym + PM: run 4 miles

Thursday ~ AM: gym + PM: run 4 miles

Friday ~ AM: gym

Saturday ~ Run 14 miles

Sunday ~ Recovery run or walk

I already went to the gym this morning even after laying in bed for an extra 30 minutes telling myself I could skip today.  I’m glad I got up and went.  I plan to walk as many days as possible this week since we are expecting beautiful weather.  Hopefully if I don’t get a chance to take her for a walk then the husband will :)

Monday ~ Grilled Eggplant, Zucchini, & Polenta with Marinara Sauce

Tuesday ~ leftover pasta from last week (we ended up having pizza the night we were suppose to have leftovers)

Wednesday ~ Grilled Pork Chops with Grilled Zucchini & Potatoes

Thursday ~ Chili (freezer)

Friday ~ Pasta with semi-homemade marinara sauce 

Saturday ~ Turkey Burgers & Mashed Potatoes

Sunday ~ leftover pasta
