Meal Plan Monday {April 2}

Last week’s race week detox did not go as planned.  In fact it was pretty much derailed by mid-afternoon on Monday.  I’ve consumed more than my fair share of alcohol and candy in the past couple of weeks and I’ve had the headaches to prove it.  Between the Easter candy we bought at the store, the treats available for snacking during my afternoon training classes at work, “cake day” at work last Friday, and a couple of days of extreme volume eating … this morning I literally feel like I could burst!  Here’s hoping this week is better because I am not enjoying seeing the number on the scale crept up more and more each week. 

Speaking of race week … I haven’t had a chance to blog about my race yesterday but I did want to share that I had a great race and even managed to PR by 2 minutes!  My race goals were conservative and I was not planning on pushing my pace and PR’ing but I got caught up in the race day excitement and started faster than I planned so I just told myself to hold on as long as I could … never really thinking I’d be able to hold that pace, or faster, and PR.  For an inaugural event, I was very impressed with the race and I’m already looking forward to next years event!  Look for my race recap sometime this week :)

Back to this week … I’m not sure what our plans will be for Easter Sunday.  We’ll have plenty of leftovers to choose from but in case we end up having dinner with family then we can always roll the leftovers onto next weeks meal plan.

Do you celebrate Easter?  What are your plans?  I know that we’ll definitely be eating some ice cream at some point on Easter Sunday since we gave it up on February 1st through Lent.
