Meal Plan Monday {April 30}

We are back home from the Monterey Peninsula and the Big Sur Marathon weekend.  We had an amazing weekend and I can’t wait to share all about it soon.  For now, I will say this --- while I enjoyed every single step of the 10.6 mile run with my running buddy Kat, I wish I had run the full 26.2 and I can’t wait to go back and experience the full marathon!



Monday ~ TBD, we are still very full from a big lunch before heading home today so we’ll probably scrounge up some snacks

Tuesday ~ Chicken & Quinoa with Asparagus

Wednesday ~ Tofu Tacos 

Thursday ~ Lentil and Black Bean Stew 

Friday ~ Pasta with semi-homemade marinara sauce 

Saturday ~ Turkey Burgers

Sunday ~ leftover pasta

I am blocking out Big Sur 2013. I was so jealous of everyone there this year.
